With over 25 years in the food industry and more than 22 years running his own food truck, food has always been at the heart of his journey. From Mexican food and catering to opening his first restaurant, his passion has always been creating food that brings people together.

But about a year ago, his relationship with food became personal. After receiving concerning health results, he decided it was time to make changes. He started incorporating physical activity into his routine and began preparing his own meals — not by giving up the foods he loved, but by getting creative with them.

He discovered that taking better care of yourself doesn't mean sacrificing flavor.

That mindset inspired Roaming Fork Prep: meals that are convenient, satisfying, thoughtfully prepared, and exciting enough that you actually look forward to eating them.

His journey has also taught him that there is always room to grow. He's lost 50 pounds, but he doesn't see that as the finish line. He continues to stay active, experiment with new dishes, explore flavors from around the world, and challenge himself to keep moving forward.
